Best recipes for leftovers: Moroccan style lamb meatballs on a bed of mint and coriander infused couscous

“I thought that it would be too spicy for them but I suppose that Indian dogs eat curry. And dogs in Morocco must wolf down spicy scraps” “You did feed them earlier, didn’t you?” We were watching our pack guzzling the leftovers from supper. They are fed early evening but we always give them the scrapings from our supper. A sort of canine Little Foodies thing (Little Foodies are in Italy at the moment and all the Min Pins would love it. Pasta has them jumping through hoops. This is a blog that is well worth...

Best recipes for leftovers: Chicken with creamy mushrooms, puy lentils and cous cous recipe

Leftovers. They tend to lurk in the fridge. Danny seems to have a mental list of them. “I just wondered who is cooking tonight? We have loads of leftovers. Pork and chicken and then there’s that ham…” D gets up earlier than I do. He has hours to examine the contents of the fridge. “We MUST use these leftovers up. It’s such a waste.” I know that it’s a failing but I rarely think, “Cold roast chicken. That could be transformed into a risotto/pie/sandwich.” I spot the chicken dressed in...

Mushroom and chicken risotto recipe

Despite a few clouds this afternoon it has been sunny all day. Only 12 hours ago I was wrapped up like Eskimo Nell and considering collecting twigs for a fire in the igloo. On a warm summer evening I love concocting a risotto bursting with summer flavours and colour. Last night, I flicked on the heater in the kitchen and mulled over the menu for supper. I wanted deep earthy flavours and tones. Comfort and warmth were a priority. There were chestnut mushrooms in the fridge and Arborio rice on the shelf. Perfect. I enjoyed making this dish,...

Best recipes for leftovers: Simple pork, tomato and sweet pepper risotto

Gliding past the meat counter in the supermarket at the weekend, I noticed a happy man laughing as he tossed a bag of meat into his trolley. I don’t usually stop at the meat counter but the laughter indicated a great bargain. I hit the air brakes of my trolley and spied a half price rack of pork. I have never tasted this before. Smiling broadly I left the counter. Danny roasted the rack on Sunday and we ate half. Delicious, delicate tender meat. The chops on the rack look quite small but three chops are plenty for the two of us. The...

Best recipes for leftovers: pot roast Pheasant and mushroom pie with cider recipe

A nibble of cold pheasant, straight from the fridge, is good if a little dry when one is grazing at lunchtime. But I never fancy a proper meal of cold game remnants. This is a hot pie that we made using up the Gypsy style pot roast pheasant leftovers (about half a pheasant) including the remains of the delicious gooey sauce from the base of the casserole (2 tablespoonfuls). You have to make the first dish to get the essential elements of the second. We love this pot roast pheasant but love the sauce more. I was surprised at how much meat was...

Best recipes for leftovers: roast pork

Danny and I tend to buy decent sized joints these days. A bigger joint is tastier and easier to roast, and the leftovers take care of another meal or two. The problem is that I never fancy leftovers. I want to cook from scratch. D “What are you cooking for supper tonight?” F “Sausages with Anna’s onion gravy.” I know that Danny loves this gravy so will be deflected from the joint that’s lurking in the fridge. The distraction is only momentary. “What are we going to do with the pork?” “Why...

Giant potato croquette recipe

My mother used to reheat yesterday’s mashed potato with milk, in a saucepan, very gently. This wasn’t good – it had a wishy-washy taste. Up until two weeks ago we made potato cakes if we had some left-over mash knocking about in the fridge and were feeling galvanised. More often than not, the bowl would be pressed into a dark area of the fridge where food mysteriously vanishes until it is exhumed days later to make room for something fresh. One lazy day last week, I opened the fridge and found a decent sized bowl of cold...
