Recipe to add zest to boiled rice, frittata and other dishes

Simple boiled rice, such as good basmati, or a dish like frittata can be a joy, especially if you add a little something to lift it above the ordinary. In my wilder years, I learned to cook by trial and error after accepting a position in a Chelsea, London household even though I did not have the foggiest idea of even how to boil an egg. Nowadays I would probably be summarily fired after Day Two but this couple were exceptionally kind people. On this blog I call them Smart Wife and Kind Husband. In England, the term Smart means relatively...

Pork risotto recipe with mushrooms, sweet peppers and tomatoes. Tasty budget meals.

Pork risotto recipe with mushrooms, sweet peppers and tomatoes. Tasty budget meals.

Ever since I saw the Compassion in World farming videos we have only been buying free range pork. These videos expose the terrible conditions that many factory farmed pigs live in and whenever I reach for a cheap pack of pork I remember the images and quickly pass by. Buying free range pork can be a bit alarming as it is expensive. Happy pork does taste much, much better and is savoured at the cottage as a real treat. Even though we have been avoiding cheap pork for months, I was dismayed when I saw the size of joint that Danny...

Store cupboard recipes: spaghetti and veal meatballs in a light tomato sauce

I had a yearning for spaghetti and meatballs yesterday. I have no idea why as I don’t think that I’ve ever eaten this dish in my life but somehow the combination appealed. I spent a morning in the kitchen creating the sauce. My challenge was to use as many dehydrated ingredients  as possible and some of our home bottled/canned tomatoes from the autumn. Incidentally these are delicious and I will be making much more this year. The meat wasn’t dehydrated – I haven’t tried doing meat yet – but I had found and defrosted some...

Quick gnocchi, broccoli and prawn recipe

“The best way to test whether spaghetti is done is to throw it against the TV screen. If it sticks it’s done.” Oliver was rather wild at that point and not finding a TV close to hand tossed a strand of spaghetti against the kitchen window. It stuck momentarily and then peeled off, worm like, dropping to the sill. I can’t remember what the spaghetti tasted like when it was finally served. All I can remember is that creamy worm hunched on the dark window pane. When it comes to gnocchi there’s no need for similar shenanigans. Just...

Slow Cooker Chef: Tender pork shoulder braised in light beer, with apple, ginger and honey recipe

Danny bought some pork shoulder steaks this week. He wanted to try out a pork, mushroom and cream recipe that he had found at the local supermarket. “The pork is sautéed in a pan. I don’t feel confident as I reckon that it should be fillet.” He was right – the pork was chewy and disappointing. It wasn’t Danny’s fault. Shoulder was the wrong cut for the recipe unless you really want to put the sharpness of your teeth to the test. He did however make an excellent rice and bell pepper dish to accompany the pork. This was the...

Best recipes for leftovers: Spectacular goose, red pepper and tarragon risotto recipe

“Would you like goose risotto tonight?” “Oh yes please!” We eat a lot of risotto at the cottage. The perfect easy comfort food. What I didn’t mention was the age of the goose. I’d found some last week in our freezer left over from Christmas 2008. It looked a bit stringy and unappetising so I hid it from Danny as it defrosted. Leftover goose – even if it’s been lingering in the freezer for months makes a risotto to die for. It smelt and tasted fine and once it was chopped up and stirred into the risotto it transformed the...

Delicious saffron spaghetti with a cream prawn and squid sauce recipe

This is my all time favourite prawn recipe. Quick and easy to make and a deluxe treat. And there’s the rub. Prawns are expensive so whenever we see North Atlantic prawns on sale we grab them and bung them into the freezer. Where they wait in limbo to finally be teamed with squid and guzzled with glee. The saffron is pricey too. We get round this by adding saffron to our Christmas lists. Generally we get enough to see us through the next year. One day I plan to do a Magic Cochin and grow my own. Delicious saffron spaghetti with a cream...

Best recipes for leftovers: duck breast risotto with summer vegetables recipe

I reckon that the best risottos contain a range of textures as well as combination of flavours, This risotto hits the mark on both fronts. We scoffed the lot – even I had seconds. But this could easily feed four, with a starter and a crisp green salad. As it only uses one duck breast this recipe is both economical and tastes divine. At one stage this summer we had four ducks in the freezer. All free range and bought for a song as they were nearing their sell by date. Danny makes a wonderful roast duck stuffed with plums. If we cook this for...
