I took part in some experiments years and years ago whilst at uni, the precursor to the GI index. What we found is that the spike from carbohydrates depended on how well chewed the food was – so if you are going to take a risk, try not to chew so much. The fat eaten with it also had an effect, the more fat in the food the slower the spike – not that is necessarily a good reason to eat more fat but it shows how different foods have a different effect in combination. That is why Hattie's food diary makes sense, certain foods will only have an effect in combination with others, or be better in combination with others.

It will be easier for you to see the effects if it is written down in black and white followed by maybe a scale of how you feel the next day. Hope you manage to get to the bottom of it and well done for deciding not to make yourself ill, just to prove something to the doctor. welldonecheers

I agree too.Knowing how foul I feel when I fall 'off the waggon' and eat bread/whatever, it just is no fun. Stuff eating gluten each day and feeling vile as a result ( and I find it does build up and get worse if one persists in eating stuff that doesn't agree with one's insides ), relax and enjoy life big_hug

Daughter (who is resistant to insulin and therefore has to be careful with diet) discovered that ice cream is much less damaging to eat than cake for this reason. smile

Somewhere I read recently that the diet guidelines for diabetes are under review, and will be re-issued next year, probably taking glycemic load into account so they will look very different. Eating well rather than following out-dated information makes sense! 

I agree with everyone about not making yourself ill to prove anything to the doctor! The only benefit of being diagnosed coeliac is that you get a bit of GF food on prescription, but talking to people in the past what was available wasn't very good, certainly not worth months of suffering for. eeek
