"I am thinking about trying to cure & smoke (or air-dry) some pork now. I have never tried this yet but my friend over near Seattle does it often so she will hold my (virtual) hand through the process; plus, of course, all Fiona's & Danny's  advice here on CSH. I think I might start with pig's cheeks to make Guanciale.  Read about it here¦..

 

Cured Pig's Cheek

Now some of that on my home-baked bread would be spiffing¦.what a start to the day¦.I just have to get hold of some skin on pig's cheeks from a good rare breed with plenty of fat. This weather might be a good time to try it. Anyone else keen on joining another group food adventure ?   wave  "

 

I have extracted this from another thread about sour-dough breads because I thought it might be of wider interest than just those who are mad on baking. It also will be easier to find in the future. smile
