That's an excellent site, Jude. Interesting that he uses wood chunks rather than chips and I agree with his list of types of wood, both to use and to avoid. Must do some smoking in my Weber this weekend.

I'm assembling the things needed at the moment - I have the barbecue, charcoal, CFC fish and am waiting for the wood chips to arrive Laugh

I was also reading an another site that you can use your own seasoned apple wood - maybe a use of those prunings Wink

In Reading we have a Clas Ohlson 'Really Usefull' shop.
A few weeks ago I noticed these and bought one…

A really neat bit of kit. It supplements my home  smoker nicely and doesn't
replace it, or duplicate functions.

I smoked some fresh mackerel in it on Sunday (caught Saturday afternoon - how fresh is that). 
Hot smoked and then  allowed to go cold. It was fantastic. Great colour and great flavour.

I've got a second hand vacuum packer. I'll see if I can pack some and mail them. or just invite you for a river side BBQ and smoking.
