Oh mixing my own chilli sauces.

More smoking, made my own pepper/msasala  smoke mix. Now that was interesting 🙂

Made a couple of casseroles which I haven't done  for a while.

Just to let you know folks, I  have just loaded up the hot smoker to smoke/roast some more garlic and some ginger.

I'll update later on the results.

Folks.

 

I have taken my smoking to another level.

 

Last weekend I smoke roasted some garlic and ginger. This all worked rather well. The garlic tasted fantastic. The ginger didn't take on much smoke flavour but enough to notice, and very pleasant.

 

During the week I had a brainwave. Using my halogen cooker on its thaw temp setting I dried the garlic and ginger. Using my rather splendid heavy brass pestle and mortar (about a fiver in a charity shop) I ground the garlic and ginger.

 

I now have two small pots , well 35mm film canisters, of some rather fantastic smoked ginger and garlic powder.

 

I sprinkled some of the garlic on a curry last night. An all new delight I can tell you.

The drying took  a couple of hours. I set the oven to one hour and then checked it to so how dry they were and just kept going until everything was dry.

 

"'Smoking kills'". If thats the case, why does smoking CURE bacon.
