I think it tastes very nice but have been told it tastes exceptional smug   big_laugh

Very much like shop bought smoked cheddar but less plasticky if that makes sense.

I did some Wensleydale which worked OK. Tried some Barkham Blue (a local cheese) but this had a slight strange bitter-sweet taste. Also did some Spenwood (another local cheese) and that was OK.

 

The cheddar tastes the best.

Hmmm thought I had posted this one this morning but its not there so here is a second try. what_the_heck

 

In November I am giving a talk on my curing and smoking. Here is a linky to my presentation in my DropBox public folder (please note that it'll probably start downloading it when you click on it… all 40Mb big_laugh ) . I thought you might like to have a look and give me some feedback. Obviously you won't have the speil to go with it. ok

 

I have used Libre Office to write it.
(LibreOffice is community-driven and developed software which is a project of the not-for-profit organization)

 

I can export it to Powerpoint if required smile
