Does anyone have a recipe or guidance on how to make these?

Kassler ribs or chops are basically smoked pork ribs or chops, however before I try to recreate this at home I was wondering if anyone here has any experience of making these?

I presume the ribs/chops will need to be brined before smoking, but it is possible they get some sort of marinade as well - any ideas?

Hi Rob, I have never done this but I have read about it, having a fondness for German food. Try this link & good luck.  wave

Hi Danny,

The first attempt basically gave us mildly smokey tasting pork chops...however it did tip the scales in favour of me being allowed to buy a larger smoking unit for better control...so once that is in place will try again...
