Blackberry and apple muffins

So today, for the first time, I made blackberry and apple muffins, and a cake with the leftovers. Making the muffin mix from scratch - another first for me.

They taste pretty good, but the blackberry seeds make the texture a bit gritty.

I've been wondering about zapping the blackberries in a microwave for a minute, and then forcing them through a sieve, to just use the juice in the muffins next time.

Good idea or not?

David- heat the blackberries slowly in a saucepan- you want the skins to soften so the juice comes out, seive then re-heat so it thickens up. You will get purple muffins, reduce the amount of liquid in your muffin mix, if it looks to dry in the final mixing add some yogurt . Should work!

In the depth of January, these are making my mouth water - yum - blackberry and apple ... mmm.

Isn't nature wonderful to us, giving such incredible flavours?
