That looks like quite a nice cake. I've decided to freeze the rest of the apple sauce but the other night I made an applesauce sponge cake which turned out ok. I followed a delia smith sponge recipe but used the sauce instead of butter. It would have almost been a healthy cake if I hadn't topped it with about half a kilo of buttercream icing big_laugh

Did anyone see Masterchef this week, when Anton made his 'carrot cake' - what a fab idea, serving them in little plant pots. Very original! ok

Yes, you're absolutely right, Toni, it was a dessert, but on the 'menu' it was listed as 'carrot cake'.

It was quite clever, though, wasn't it, as Jay Rayner said 'I like a dessert that talks to me!' laugh

I have a deep fondness for Jay Rayner, he is a very sensible man when it comes to food.  Not so sure about the woman who is on the judging team, she seems to be mostly joyless.  Or have you a different opinion?

The judges I've seen are Jay Rayner, William Sitwell (Waitrose magazine editor) and Tracey MacLeod (she used to present The Late Show). In the last series, I think Charles Campion was also a judge, he is a food critic for a few newspapers etc.

I feel that the effort that the chefs put into providing a meal in only an hour or so, isn't always properly appreciated by these critics, but then what do I know! big_laugh

Yes, I agree with you - Tracey doesn't seem to have a sense of humour ...... but maybe she sees it as very serious thing, judging.

You could well be right Val.  I always wonder how they manage to eat all that food at one sitting, I could just about manage a starter and another one about two hours later but that would be my limit!

Just to return to earlier on the thread- velvet cake and keeping. I make my velvet cake as our Christmas cake, it is a really good keeper, in fact the flavour gets better after a day or so in a tin. I would recommend a velvet cake for anyone not keen on fruity Christmas cake, as the texture is quite resilient it takes to icing very well too! (It also takes well to being made with more chocolate in it)
