I bought a new toy the other day, a pasta machine. Why ? well if I am honest I went out for a meal at friends and we had pasta as a starter and it was magnificent. It turned out that the lady of the house makes her own pasta, and this became, for me, the main topic of conversation for a while, whilst I dug into the wheres and whyfors etc. So armed with information I ordered and bought an Imperia Pasta Machine I guess for you guys this is all old hat but for me the adventure continues. What a revelation home made pasta is, I won't be going back to buying anymore and am now researching various food/recipe ideas/combinations.

What I am uncertain about is whether you can freeze the pasta dough or even the finished pasta (uncoooked) and seem to read differant points of view about that - any advice please ?

So, tomorrow eveing we are having Gravadlux with Tagliatelle, the salmon is already 'curing' in the fridge.

If anyone has any suggestions for variations to the pasta itself (ie different flours, maybe herb additions whatever) I would be grateful, also can I freeze this stuff. Oh and by the way HELLO again one and all.

I have reached an age where my train of thought often leaves the station without me...

Homemade pasta is a recent revelation for me too.....thanks once again to Nadine, who gave me a link.  I can't remember where it is, but I dare say the lovely lady will come along and oblige soon.  I made mine with a GF flour....again, can't remember which one I used, I have so many now, I may well have said in that particular thread which I can't remember about.....I have a problem with remembering things, you may have noticed big_laughembarassed

Anyway, the pasta was so absolutely delicious that, like you, I will always endeavour to make my own from now on.  I rolled it out by hand, not having a pasta machine, and you do really need a machine as it's pretty nigh impossible to roll it out thinly enough.  And yes you can freeze the pasta dough, I did as the quantity was too much.  The dough once defrosted was no different in taste or texture to the fresh - go ahead and try it.  Oooh I do like this baking lark and sharing all our experiences with you lot oklaughbig_hug

TA, no, I am and have been so busy with this town plan project and I have got involved with a local community enterprize company and with A having bought a house in my village getting that move sorted out for the end of the month, plus getting excess furniture sold on ebay it is and has been a really busy time and probably will be for a while yet.

I may not have posted on the forum for a while but I often have a scan through what is going on, plus there are the odd forays onto facebook, so I am around and do not want to be forgotten!!!

If this is retirement I think I may go back to work for a rest!!!
