Sorry Aly, didn't see your question, yes as Val said they are the texture of a carrot cake type bun

Hi Terrier, these cupcakes were for a friend's 45th birthday.  I am pleased to say the end result was good.  She got 24 red velvet cupcakes (well, they were red, the flavour was chocolate orange), 24 carrot cake cupcakes and 24 lemon & strawberry cupcakes.  I left for Italy with red stains across my fingers that still haven't washed out...was glad for the rest when I got out there though...I now have to make a strawberry and chocolate cake that is in five layers with both chocolate ganache and cream between each layer for my sisters birthday...I may actually look forward to returning to work by the time my leave is up...

Glad to hear it turned out well Rob. Good luck on the birthday cake, that sounds pretty special too, is it going to be chocolate sponge & strawberries, or do you need tomake strawberry sponge too?

Hi Terrier, it is a chocolate sponge - she is a chocolate fanatic.  Just with fresh strawberries on top and possibly in the layers as well...not really sure as have to study the pic she sent me again...I saw a good chocolate torte topped with strawberries out in Florence that I think I might copy - at least the strawberry decoration on top as it looked good.
