help!!! left the flowers in a little too long and the stuff began to ferment!!! Any tips would be great please as I have exploded 5 bottles so far!!!Eeek

Sorry - I have no idea how to recover from that problem you are experiencing. My dad made home made beer many, many years ago. He stored it in the broom cupboard under the stairs to mature. One very hot August night it was like the Somme at a distance!

Try putting it in demi-johns like in wine with the air traps, at least they won't explode then Cheers

just got to find some demijohns now!!!

ps I assume as it has fermented that it is alcoholic now and unsuitable for my son?!

I used to find even the cordial was alcholic to some extent as I used to always go red in the face as I wasn't used to any alcohol at all. Didn't seem to faze my kids though Eeek

Shelley, while your elderflower continues to ferment it will use up all the sugars, so to stop it you need Campden tablets - potassium or sodium metabisulphite - and hoping that your bottles were plastic and not glass ........ phew.

Suggest Grolsch-type bottles after adding the tablets.

It will not return to a cordial though, sadly.

really no idea where to find campden tablets!!! Eeek

 

sadly the bottles were glass but they were stored in a box so all mess was contained.  Effectively I had 2 types of bottles, some shop bought ones and these broke as the bottoms blew off and some reused glass lemonade bottles and they have generally been fine.  I am releasing the pressure build up every day now; will it eventually become elderflower wine?? or champagne??

Shelley - daughter had the same problem last year, and she said that the result was neither wine nor champagne, as it ended up with very little fizz, and it became extremely sweet and sickly, and she suggested that perhaps used as pouring over ice cream or somesuch. In fact she hasn't used hers yet, they are still sitting in bottles unused.

With reference to campden tablets, we are in France atm, and we will go in search, and I'll get back to you if we find it/them!

I've never tried to make an elderflower cordial but yesterday I started an elderflower wine. I made some last year and it worked out quite well.

We love the St Germain elderflower liqueur and I wonder whether elderflowers, vodka and sugar would make something similar...
