Eucalyptus and elderberry liqueur

Chop up a whole medium cooking apple, stick in a pan with 400g elderberries, 500g sugar, 2 tsp dried chopped chillis, 3 tbsp chopped eucalyptus leaves, 300ml water, juice of 1 lime.

Cook gently for 5 mins then strain through a sieve, pressing with a spoon to get as much pulp as possible. Stir in 100ml of dark rum and seal in a jar.

Either drink straight (in small quantities) or add hot water as a toddy.

It is medicinal Danny, but don't let that stop you at other times. The book says it's good for if you're feeling under the weather . As I'm sure you all know, elderberries stop viruses replicating and boost the immune system.

Finally, a use for the gum tree that grows on the neighbour's side of our driveway fence. Fiona does not care for it but I am quite fond of it.

I wonder how many varieties there are, and if all are suitable for human ingestion . .
