Good news Aly.   waveI know it is more difficult for you being a vegetarianI eciding you have to eat fish & maybe some meat to stay well on the diet.

Wednesday menu

 

Breakfast  -  Grapefruit

Lunch  -  Remains of last night's vegetable chilli  ( it was delicious )

Dinner  -  Prawns with rocket, watercress, tomato, spring onions, gherkins, and peppers with a dressing.

               Glass of red wine

 

Glad you are joining us again Aly.  I must admit it takes a bit of doing.

 

PS Editing this to say I have just eaten some strawberries and raspberries with low fat yoghurt.

Wednesday, Day 2 of Phase 2:

 

Breakfast:  Slice of ham & a poached egg

 

Lunch:  Cold roast chicken with a tomato,basil & mozzarella cheese salad.

 

Dinner:  Prosciutto crudo & melon. I had to eat cold food as the electricity kept going off due to lightning damage in our area. Anyway I wasn't very hungry & was very happy to eat more fruit.  laugh

Thursday, Day 3 of Phase 2,

 

Breakfast: Sliced warm ham (actually fore-hock of bacon I had cooked early in the morning) with a poached egg.

 

Lunch:  A bowl of Chicken & Bacon soup using the carcass of a roast chicken, after I had picked off all the meat, I cooked it in the stock from the fore-hock. I added the already cooked chicken at the end. 

 

Supper: I wanted more soup in the evening (rather than the liver & bacon I was going to cook) so I added some frozen veg (peas & beans) & spring onion greens plus lots of fresh harbs as well as some already cooked duck meat from the freezer.  It was scrummy & I ate a huge bowl of it.  ok  smilesmile

Thursday

 

Breakfast:  Berries and yoghurt

Lunch: Bowl of soup and a piece of whole meal baguette  ( was at the Hall at the charity lunch )

Afternoon:  Two small nectarines

Dinner:  Same salad as yesterday but with prawns, mussels, smoked salmon  Berries and yoghurt  ( none left now!! )

Marmite sandwich (with a little butter)

Mid afternoon
Apple and nectarine

Dinner

Tarragon quorn (I can thoroughly recommend the chicken tarragon, OH had the full version)
Broccoli and peas

Friday, Day 4 of Phase 2:

 

Breakfast:  Slice of cold boiled fore-hock & a boiled egg.

 

Lunch: Cold duck & a large mixed salad plus a peach afterwards.

 

Supper; A tin of sardines on toasted wholemeal bread (no butter just the oil from the can & lemon juice & lots of black pepper & parsley & dill.

*I haven't had tinned sardines for ages & these were lovely ones, canned in olive oil. I zested some lemon over them & sprinkled with pepper,parsley & dill about an hour before I ate them, it makes all the difference, well to me anyway. laugh

Breakfast: Didn't manage any

Lunch:   The rest of the seafood salad, basically same main course meal as dinner yesterday

Dinner:  Lots of soup and a piece of whole meal baguette

     A nectarine and a kiwi fruit

Saturday, Day 5 of Phase 2:

 

Breakfast: Fresh raspberries, nothing else

 

Lunch: Fresh crab with a hard-boiled egg & a mixed salad dressed with olive oil & lemon juice.

 

Supper: Ham & melon, with more raspberries afterwards. Oh, & a glass of wine !!

 

smile  All this is so easy now I am allowed to eat fruit, mind you I could have done with more wine....!!laugh laugh

big_laugh Hi Val,

You didn't see the size of my lunch…..it was huge, as was my supper. I hate eating breakfast (except on rare occasions) so having fruit is perfect for me. I promise you I am not starving myself, I love food too much to do that. I hate to stuff myself if I am not feeling hungry…..I like a good helping of meat or fish with a perfect vegetable  rather than masses of different veg. I am feeling so much better now & I don't miss the snacks I used to have between meals……not even the Jaffa Cakes !!!  big_laugh

Sunday, Day 6 of Phase 2:

 

Breakfast:  Fresh strawberries with a little pepper.

 

Lunch:  Ham & melon plus a small Cos lettuce & herb salad.

 

Dinner:  4 rashers of unsmoked bacon, sauteed batons of calves liver & lots of chinese cabbage with spring onion greens. I added a little Worcestershire sauce & a tiny splash of port at the end to make a gravy. I then had some more strawberries for dessert.  

 

It was a huge & very tasty meal…..I hope this reassures Val that I am eating enough.  laugh
