Grrr - how did I manage to make a batch of quince jelly that would not set? I didn't even think that was possible.

 

I presume I can reboil it? And add some pectin.

Add some Apple Jelly, made with Bramleys or Crab Apples. That will do the trick & taste a lot better than commercial pectin.

it could be the acidity rather than pectin,try adding the juice of a lemon and reboil

I can't use lemon juice. My mum is allergic to citric acid and at least one of the jars from this batch has her name on it.

 

Is there an alternative I could use?

Hmm, well you could try boiling up some cooking apples, jelly bagging them and then mixing the two together and see if you get a set...or you could use gelatine in the one for your mum?
