Hi

I'm probably posting this is the wrong place but I'm gambling on you all being too sozzled  pint sloe_gin wine champagne cheers  to notice after the big meet-up.  medicine16

Has anyone made jams or chutneys with dehydrated fruits?   Not sure whether the dehydrating process would destroy or concentrate the pectins .......... then again it may have no effect at all.   Any thoughts please?

I don't think it's in the wrong place, but I'm thinking that it is definitely the wrong time.  Better ask again on Monday!  big_laugh

I'll try that again!

Hi Tracey,

Years ago I made apricot jam with dried fruit & it turned out OK but you certainly had to soak the fruit first  to rehydrate them as they were much drier than they are nowadays. To me the jam has a different taste that that made with fresh fruit but in those days we had little choice as few people could grow their own exotic fruit.  Here is a link to a recipe using dried apricots¦¦..

Hope this helps.  smile

Thanks Shelley & Hattie

did think about rehydrating with alcohol but think that could be dangerous on all kinds of levels.

Oh sod it - a small batch is going to have to be tried that way now I've thought about it.

xx
