| | Has anyone made this using their own lavender? We have a couple of bushes in the garden which were wonderful last year and we also live not too far from the Hop Shop in Shoreham which grows lavender on a massive scale. http://www.hopshop.co.uk/ They were featured in a TV programme recently and I know the farm quite well as worked as a secretary on the neighbouring farm back in the 80's….was only cattle and arable back then. So I could buy the oil from there or just use my own lavender. I'm sure I read somewhere that you can't use lavender to cook with as too bitter so I thought I would ask first on here to see if anyone has used it and what recipes there might be. I'm looking to make a clear jelly with it – any thoughts? | The "s" button on my keyboard keeps sticking……makes for some interesting messages ;-) |

| | I've made lavender jelly at some time in the paste Maura and also lavender ice cream which is beautiful, I just used the stuff out of my garden, the jelly recipe is similar to how you'd make mint jelly, and makes a clear light amber coloured jelly. lovely stuff |

| | Janet – did you just boil up your apples with the lavender heads together and then strain it through a jelly bag overnight. Or did you tie up lavender in muslin? Only just got round to picking some lavender heads and bit worried I might have left it too late as the flower heads are just starting to dry out, but have got a few fresh ones to add as well. | | I always jelly bag, so never bother about tying up the lavender separately, provided it still smells then it should add flavour/taste. Couldn't really say how much I used, maybe half a dozen heads or so, you don't need a great deal as you just want a hint of it. If you make it too strong it's a bit too perfumy to eat. |
