Hello, does anyone have a good pickled red cabbage recipe, that makes good and crunchy, not soggy cabbage??

Also, why do my pickled onions keep going soft, is it because I plunge them in hot water to peel?? Even if i only count up to 20 as reccommended?

Please help, I'm on my second batch and they feel a bit limp to me!! I don't want to end up with a cupboard full of soggy produce!!Frown

Yes I could do with some help too.

My pickled red cabbage seems to resemble strips of crunchyish pink vinegar.

Now I've got three jars of crunchyish pink vinegar strips.

The only thing I can think of is that might I left it too long before I pickled it maybe they have to be properly fresh

Well, that didn't go quite as expected
