I have done a bit of googling to try to explain why I ask such daft questionsdoh

I live in a county called Jämtland, Half the size of Scotland but with a population of 113,000smile

The district , I suppose it might be called a parish, is twice the size of Lancashire and with a population of 7000.

We do try to follow the E.U. rules but it is sometimes a bit difficult. My nearest slaughter house is 120 miles away ;-)

 Sooo, I have permission to bake etc. I have permission to make pies and sausages. But rules are going to get tougher and I want to be ahead of them. I too when I go to markets have my certificate from the council to say I am allowed to sell things, but nothing else. I have an insurance, about the same price as you are quoting.

Hi Renee, been to Terrington, but not where I'm from, I live around 10 miles south of york.

I did the online course, but as Maura said, you need to be sure they are worth the paper and effort.

i have the same issues with local fairs and events, I've not had my kitchen inspected but suppose I really ought to get it done.

Hi all, I've just registered having searched online for information on this topic.

About my interest here, I have come up with a great (to me) recipe for a really flavoursome chilli sauce, it's got heat and more importantly flavour and the feedback I've had from chilli lovers has been very encouraging and I've had repeat calls for supplies so I've decided to go for it and attempt to get this thing off the ground.

I have found that to be above board one needs to jump through a fair few hoops and gain recognition, accreditation and certification to make a commercial business. You need to first register with the appropriate councils Environmental Health Dept., get a laboratory to provide content analysis and shelf life duration, complete a HACCP assessment and method statement and have a food hygiene safety certificate.

This is in order to be above board with the authorities and will add credence to the business venture with the potential customer base.

 

My question is, has anyone here completed a HACCP statement before or, even more pertinent if they have, is there a template model to download as so far I have been unable to source one that's relevant to my product? The other forms are reasonably straightforward but this is proving to be a stumbling block insofar as where I should start.

Can you good folks offer any pointers?

Hello brightspark, yes, I've done quite a lot of searches but either I'm rubbish at it or there is very little chance of getting a free template. I actually don't mind paying a nominal fee within reason but I don't think I need training, it is after all a method statement and tisk assessment in one, it's doable but tedious.

In short, I wanted the easy way out as I'm getting a bit tired of all this paperwork though I guess it's not going to be a regular occurrence.

Thanks for helping out though, I'll take a look.

Sorry Steve! it's hoops to jump through all the way! done some paperwork! but not to the levels you're talking about here , but then I only sell on to friends or at small village sales and events.

I think maybe you need to find a forum where the members are actually doing the same as you are trying to do to get some practical help - everyone on here is lovely and really helpful and there 'might' be someone who has the experience you need but you need help now so I would try and find someone actually selling commercially or maybe talk to a small business advisor.

There was that guy who invented Reggae Reggae Jerk Sauce (Levi Roots) who used to make the sauce in his kitchen and he went on to make millions so it can be done (just make sure you don't lie about where the recipe came from)!!

So sorry I can't help but I wish you lots of luck.

Yes, I heard he went on Dragons Den, I don't think that's an avenue I'll actively pursue for now but the small business forum thing is worth a look. It's good stuff so it's worth going for especially as I'm looking for work.

The whole thing is fun, ultimately I'd like a small unit so I can produce in larger quantities but first things first !!!!

 

What do you mean by not lying about the recipe? This is pretty much my own recipe and one I'm guarding for now, when I get the analysis done the contents have to be labelled but that's the way it is. I'm not expecting any lawsuits.!

Oh, no worries, I wasn't aware of this, sounds about right for business practice, who knows, if my venture gets off the ground I might get my very own lawsuit for compensation but I can't see it!shoo_fly

 

Found it, if anyone else is looking then go to the link, open it up and to the right side of the page it says related forms and documents on word format and you'll find the template that can be edited to get rid of the beefy contingent (you'll know what I mean when you open it up)

Cheers terrier, I will be updating once things start to get moving. The template was offered by a member on a uk business forum. Unfortunately said forum appears to have it's share of idiots as I noticed one member had been banned and another smart alec trolled my post. But he sells golf clubs so I rest my case, I got the response I needed and for that I am grateful.

I should be getting some labels this week, a favour on the cheap, I tried another firm but they wanted me to do something called 'bleeding' correction and I am not up to that task. Pity they waited two days after accepting my payment to tell me this but hey ho, onwards and upwards.
