I got these recipes somewhere on the internet a while ago and now always have some in the freezer

METHOD  place your choice of chicken  thighs, drumstick , breasts in a ziplock freezer bag, add other ingedients  give the bag a shake freeze upright and store in freeze. When required defrost in fridge overnight, tip into roasting dish and cook as you would normally, i sometimes oven bake sometimes on the george forman

LEMON GARLIC CHICKEN

2 cloves  of garlic

4 tblsp olive oil

2 tblsp chopped parsley

1/8 teasp pepper

LEMON CHICKEN

2/3 cup of lemon juice

1/4 cup of cider vinegar

1/4 veg oil

2 tblsp minced onion

BBQ JELLY CHICKEN

3/4 cup of ketchup

3/4 cup of blackberry jam

1/8 cup of white vinegar

1 teasp of worcestershire sauce

2 teasp of chilli powder

1/8 teasp of salt

CHILLI MAPLE CHICKEN

2 tblesp water

1 teasp salt

1 1/2 tbsp of maple syrup

1 tbsp of chilli powder

wave Hi Eileen,

Good marinades.  ok  Thanks for posting them.  I do something similar (different recipes), it also works very well on other meats…..especially on the cheaper, tougher cuts like shin of beef or ox/pigs cheeks. It is very useful in summer to have chicken ready marinaded in the freezer for the BBQ. I love Thai food so I use lemon grass, garlic, spring onions, root ginger, fish sauce, soy sauce, fresh chopped chillies coriander & a little toasted sesame oil as well as veg oil. It is so good.

wave  Thanks for those Eileen.  I always have lots of pheasant in the freezer   ( got 25 brace last weekend!! )  and am always looking for new recipes.  These would work well.

more chicken marinades

PEPPER LIME CHICKEN

1/2 teasp lime peel

2 cloves of minced garlic

1/4 cup of lime juice

1 teasp pepper

1 tblsp veg oil

1 teasp basil

SPICED CITRUS CHICKEN

2 tblsp olive oil

2 tblsp lime juice

2 tblsp orange juice

2 tblsp lemon juice

2 tblsp chilli powder

2 tblsp paprika

1 teasp cayenne

1/2 teasp pepper

1/2 teasp salt

CRANBERRY CHICKEN

2 tbsp melted butter

1 tbsp soy sauce

1/2 cup cranberry sauce

1/4 cup orange juice

1/8 teasp cinnamon

STICKY CHICKEN

2 tblsp oil

1 tblsp soy sauce

3 tblsp smooth peanut butter

3 tblsp ketchup

here are a couple of dry rub recipes for meat i got off diners,drive thrus and dives. the recipe is in cups but i just substituted for tablespoons, as we don't tend to get spice in large tubs over here

BLACK MAGIC SEASONING

2 cups of onion powder

2 cups of garlic powder

1 cup of cayenne pepper

1/2 cup of white pepper

1/2 cup of black pepper

1 cup of thyme

1 cup of oregano

2 cups of salt

1 cup of paprika

i cup of cumin

mix and store in an airtight container (all spices and herbs are dried)

BBQ DRY RUB

3 cups paprika

2 cups sugar

2 cups garlic powder

1 cup of salt

1 cup of onion powder

1/2 cup of chilli powder

1/2 cup black pepper

1/2 cup black magic seasoning

mix and store in airtight container

I'm drooling at these marinades.  Unfortunately my OH is allergic to all poultry so I seldom cook it.  However, I do sometimes buy ready frozen portions for when I can be bothered to cook two separate meats for a meal.

some of them could probably be used on other meat, the dry rubs were made for beef but i have used them on chicken and porksmile
