You might like this site, I think it is a hoot but it does have its serious side if you are keen on sausages.  Also, if you read on, there is a competition to win a pack of bacon too. I must say that the review is so good that even I am tempted.

Nice sausages Simon- care to share the recipe? Will you smoke them as well?

I used to make sausages as part of my job, to test out new savoury flavours in the late 80's early 90's. It was pretty easy to do as the kit for chopping and stuffing the sausage casings was well provided for.

Now I think I could still make them, but don't have any usefull kit anymore.

Might start to make them again if I can get some basic stuff together.

 Are we having fun yet? I am!

Haven't tried them yet, maybe tonight or tomorrow.

A very simple recipe, Lean belly pork and not all the fat/skin, onion, ground black pepper, little salt and herbs. I used a couple of slices of Hovis seed sensations as the binder.

I won't be smoking these, want to see how they come out first. I did fry off a small pattie to check seasonings and that tasted ok

Sausages eh...now someone is talking my language. Presumably Simon you have a machine to fill the skins, please tell more cos I am definitely on the wavelength. They look really good.
