Chris, we used to refer to you as Sausage Chris after you donated multiple lbs of delicious product to our first CSH get together a few years ago. The vast quantity that went unused kept us fed for weeks afterwards!

Hi Danny, hope life OK up there in the frozen north. I assume you are not 'in Armley' as in at the Queens leisure. Huge unwelcoming place, at least from the outside.

We remember that get together well and I remember bringing back with us some Powters which were really good, sometime I will go to Newmarket again and get some more and also try some Musks.

Meanwhile Danny, in-spite of TA's impetuosity and wish to hurry us along, the search goes on.

Do you have any of good report up there? 

 

I have reached an age where my train of thought often leaves the station without me...

Just for you TA

Oxford Sausages

900g ground pork

350g shredded suet

2 cups of fresh breadcrumbs

zest of 2 lemons

1 beaten egg

1 tbs chopped fresh herbs

1 teasp grated nutmeg

1 teasp of chopped sage

salt pepper

a little flour

combine all ingredients except egg

add egg and mix well

dust hands with flour

form into sausage shapes.

I haven't tried this one yet, but it looks okay. It came from a magazine I used to buy called country kitchen and I think is a victorian recipe brought up to date

I love Donald Russell meat , if I am going to treat myself I usually buy a meal planner pack. I also had the cheesecake you have a couple of christmas's ago they were lovely.

Thank you Eileen!  Wondering about adding the suet though - really necessary?  I would use patty shapes not sausage, I think.  I might have a bash at this when D goes of to training camp soon.

Like you, Chris, I have a view of Armley prison from the outside.laugh

It surely is a grim and forbidding place.

No local sausage makers of note up here from what I ave seen so far, which surprises me.

Must say that no sausage I have tasted beats Musks.

I travelled to Sunderland last weekend to watch them play Southampton and stayed over in a Premier Inn that had a Brewers Fayre attached. The pork sausages they served for breakfast were remarkably good. Didn't think to ask where they were sourced so I guess I will just have to make the trip again soon!

Danny, have you tried any of the sausages from Leeds Farmers Market? Not cheap, but some were very good. I haven't been there for a year or so, and it was longer ago that I had 'normal' sausages, not gluten free, but I seem to remember some good ones.

Hi Barbara - no, I have not been on the lookout for sausage really until today. I will check out Kirkgate Market on my next visit to Leeds centre.

Today I checked out the window the the little butcher shop in Armley - Skeltons. I was surprised to see several trays of sausages, each with a card on to saying that they were Champion Winners. Of what I don't know yet. I got two each of pork, leek and sundried tomato.

The pork were disappointing - no great flavour at all. But the leek and tomato were both delicious. I will have those again. Next time I will try their beef sausage too and find out what accolades they have won.

Just minced up a batch of pork for my second sausage making attempt tomorrow.

 

650 gms Shoulder

200gms Belly

Finely diced shallots

Pepper

Salt

Mixed Herbs

Mace

Red wine
