Fusilli con Salsa alla Genovese
Serves 4
500g fusilli pasta
Salt and pepper to taste
50g freshly grated parmesan optional
Extra virgin olive oil
Sauce
50ml olive oil
750g finely sliced onions
800g chopped tomatoes canned
1 tbsp tomato puree
Heat oil in a large saucepan and fry the onions until they become transparent and soft. Add tomatoes and tomato puree, salt and pepper to taste. Continue to cook on a low heat for another 15 mins .
Meanwhile cook pasta
Drain pasta and mix with sauce , serve with parmesan and a drizzle of olive oil if wanted

really tasty for such a simple sauce
