4 ounces of carrots cut into batons

2 ounces of marmalade

1 ounce of butter

1 ounce of caster sugar

250ml of water

Put everything in a pan , bring to the boil and then simmer for  about 20mins until liquid has evaporated and carrots are sticky.

Thank you; something that I shall not attempt - too sweet.  I do remember though, when I used to cater for the American side of the family, that I used to cook sweet potatoes and candied something or other...at Christmas...

I'll try that again!

Never had Sweet Potatoes, grew up in an age where food was plain, still prefer that, but must admit I do like Curry, and Chinese food.

Sweet potatoes aren't really sweet. I cook them several ways - as fries but baked in the oven; boiled and mashed with nutmeg and sour cream; or baked whole then the innards scooped out, flavoured and returned to the outer skin. I also have an Indian dish which calls for cubed sweet potatoes to be added to a chicken and coconut milk stew - I know it sounds strange but it's quite tasty.

Still not tempted, Chris!  I had Butternut Squash for the first time last week, when Daughter bought me some Oven ready Veg, quite liked it, a bit like Marrow.

wave Sweet potato and butternut squash are two of my favourite things to eat.  Yesterday I made a soup with butternut squash, sweet potato, onion, chilli flakes and coconut milk.  It is quite delicious, although a little fiery.  I hope the folks on the course I am catering for on Saturday like it.
