To answer some of your original questions, Toffeeapple, no, I haven't zapped the fruit and alcohol in the microwave, but you know what - I will be now!

When will I make it?

Well, Hubby says I mustn't cook any more cakes until the Christmas cake is finished, and we haven't started on that yet ....... oh well, best get started, then!

I'm going to look out that other chocolate recipe I mentioned - it is called 'Sea Cake', and has a little story to go with it.

That reminds me that my son and his fiancé made their wedding cake at the end of September last year, they are getting married in October and I bet that cake will be well plied with Sherry or Brandy in the meantime.

Ah, you would think that, wouldn't you, but no, the reason it is called Sea Cake is this:

About 25 years ago, a family moved into our neighbourhood from Sweden, Nils-Olof and Irene, and we have remained friends ever since. It transpired that Nils-Olof and his friend, Jan-Ake had built a yacht for sailing on the Baltic Sea - hence the Sea part of the name. Now, the two wives, Irene and Agnetha, are chocoholics, and wanted to create something that they could usefully and practically take on board a yacht, but still be scrummy.

So here is the Sea Cake for taking out on the Baltic Sea !

200gms plain chocolate, melted

175gms butter or margarine

200gms light brown sugar

3 eggs, separated

100gms plain flour

50gms chopped roasted hazelnuts

2.5 tspns instant coffee granules, dissolved in a small amount of boiling water

 

Pre-heat oven to 200 C; grease and line 20cm (8") round cake tin

Cream butter and sugar together till light and fluffy

Add egg yolks one at a time into the mix, beating well

Add melted chocolate, mix well

Add flour, hazelnuts and coffee. Blend together

Whip egg whites till firm, then fold gently into mix.

Pour into prepared tin.

Bake for approximately 30 mins - but the centre should be soft and squishy - and, as it cools, it continues to cook a little more. However, we tend to eat it when it is warm and still squishy, even with a dollop of cream on top !

Oh, and guess what, Toffeeapple, I managed to trace back through all my recipes and found the picture of the Chocolate Stollen - and, you star, it is the one that we have found!!!! (It's just a different picture to the one on that website)

That Sea Cake sounds lush.  I might even make it one day.  Good news about the Stollen, though I'm not sure I can claim any credit.  Love your enthusiasm, it shows in your posts!

Sadly, you cannot change your registered moniker. But I have to say that everybody seems to think of you as BrightSpark, which is a compliment IMO Ok
