I fancy making a savoury veggie steamed pudding but as it's not something I've ever done before, nor in a sweet format, I have no pudding basins.  Is there any reason why I couldn't just use pyrex ramekins for small individual puds?  Will they be terribly hard to turn out?

Having 'borrowed' mothers old steamer top pan thing (Probably older than me!) on a recent visit home I want to try it out.

How about doing it/them in muslin, or any natural cloth.  Dampen the fabric first then cover with flour then put the filling in and tie the top.  I've never used a basin for steaming.

I'll try that again!

Aha - that  I do have.  Not to be really dense but when you say 'then put the filling in' do you not have a suet type pastry outer in this method?  (If it helps this was my inspiration.)

I've never done it that way, but I don't see that it should stop you, especially since you have some cloth. I'd still dampen and flour the cloth to help with removal though.  Good luck.Magic

If you do them in pyrex grease it thoroughly so the pudding will drop out. If in pyrex you can seal it with foil tied firmly over the top and bake in the oven in a bain marie `( dish of boiling water) rather than steaming.

Can I suggest that if your ramekins are straight-sided, then perhaps you can grease then line with baking parchment - instant removal then!

I do this with Victoria spongecakes, too.

However - I made the sticky toffee puddings - a la Delia - on Tuesday, and her little metal pudding bowls - just greased with oil - slipped out beautifully with no parchment. The porcelain ramekins though, were not so clever(!). Taste was not impaired, of course, but didn't quite look the business!! Whistle

Just had a look at these, Ruth, I can see why you want to make them - they look really tasty!

.... of course, only if you have a pan that can take them; otherwise I guess you would need dariole moulds for individual puddings.

That's a cunning idea, wonder if it would fit in the pan.  Looking at the size of each cup I think the whole must be 8-9″ square.  Hmm – may be a little large.

That seller though – omg they have watering can shaped cookie cutters – I WANT!!  Also the carrot one.  Big_Laugh Cheers  Brilliant!

Lakeland do very nice individual sized lidded pudding basins for steaming- had mine years, absolutely excellent.
