Ham to be used up, and some rather hard Potatoes, so Potato Salad, with Ham and Salad.  Took Gooseberries out of Freezer, Gooseberry Crumble and Cream. All under way,so can forget about it, and get on. Going to Bake something but not sure what, yet.chef

Tonight, it'll be the second half of the beef casserole - planned for last night, but having bought the skate wing, it had to be skate and chips last night. So, nice'n'easy tonight! ok

Chicken Schnitzel, with Sliced roast Potatoes, and Green Beans. Trifle. PS you may notice that I eat a lot of Trifle, this is because People know I like them, and so they bring me them and they have to be eaten.  It's a hard Job, but someone's got to do it !laugh

My brother came for lunch today.  I did a fruity chicken & grains salad - bulgar wheat, spelt, quinoa, barley, with shredded chicken breast, red grapes, chopped dried apricots and clementine segments, sliced cucumber and cherry toms.  Made a dressing of the juice of 1 clementine, honey, lemon juice and olive oil.  We had it with coleslaw and olive focaccia bread.  It was yum.

For pud we had Cornish ice cream with the last of our own blackcurrants out of the freezer.  I had a packet of shortcake biscuits we'd been given ages ago - we rarely eat biscuits so they'd been in the back of the cupboard.  I crushed some to crumbs and tossed them in melted butter, they made a nice crunchy topping for the ice cream and blackcurrants.

I've made Cornish pasties today from a traditional recipe.  Don't usually make pies and pastry because of the high fat content but once in a while won't hurt.  It must be at least 2 and a half years since I made them last - although we have bought commercially made ones.  I never seem to get the seasoning quite right but we'll see tonight.

Well OH said the pasties were OK but the professional bakers need not be worried!!  roll_eyesI agreed with him as I still did not get the seasoning right.  I threw in what I thought was loads of black pepper and salt but it was not so I'll leave it to those who know what they are doing.  Tonight it's going to be a risotto.  I made carrot and coriander soup for lunch.  Have to watch what I'm cooking for a while because OH's Warfarin levels were up again today.  Think he's had too much vitamin K lately which affects the levels.

Chicken fricassee I reckon - cold chicken, onion (or leek), mushrooms, and bacon in a white wine sauce sounds tasty enough! laugh
