 Garlic and basil oil is one of my staples. I make it every year, very simple, I stick a load of basil leaves from my over production of basil into a sterilized jar, a few cloves of garlic and then top it up with olive oil, give it a stir with a chopstick to remove any air bubbles, and then seal it and leave alone for a month or two. I then filter it, usually through a jelly bag or muslin, and bottle it. The basil leaves go all slimey, but the flavour is wonderful. It use it all year, down to my last bottle at the mo, but will be doing a ome more any day now.
