I don't have a freezer either.  I didn't realise that vacuum packing would extend the life of things.  Live and learn...

I'll try that again!

It reduces most of the oxygen in the pouch down to about 2-5% therefore retarding the ability of bacteria to multiply and produce toxins. ok Apparently smile

Hello, what kind of food sealers can you recommend? At my work we have a vacuum chamber (Minerva I think) but I really can't afford a vacuum-chamber at home, so I have to settle with a sealer. Hope you can help me, so that I can start sous vide'ing at home!

Thanks,
Kyle

Hello Kyle, welcome to the forum.  I can't help you I'm afraid, but am sure someone here can.  I know there are at least a couple of members who use vacuum sealers.

In the meantime, why don't you put a post in the Introduce Yourself thread?  We do like to know a bit about our new members....we don't bite, honest!  big_laugh

Hi.

Sorry about the delay in replying, only just got told about the question.

I don't pop in very often these days due to time constraints and working long, but mostly enjoyable, days.

My vacuum sealer looks just like this one,  Food Sealer and was about the same price. There are cheaper ones such as the Andrew James around the £40 mark. They may be ok for occasional use but for more often I would spend a bit more.

Make sure you get decent bags and check they can be used in a water bath, not all can.

Good to see you Simon, if only occasionally! big_hug

'A hug,' said Pooh 'is always the right size!'
