Hello!

My name is Terri and found this site while looking for jam jars!

I'm an American (from Pennsylvania) living over here in Broadstairs, Kent in the UK.  About 7 years ago, my mother-in-law gave me a book on preserving.  I was also looking for a job at the time and not having any luck so mum-in-law suggested I try selling what I was making.

I started selling to her and her friends and eventually started going to different local fairs and markets.  I'm now a regular vendor at a monthly handmade fair in Ramsgate along with other annual events.

My product line includes homemade fruit preserves, jams and jellies, chutney, piccalilli, pickled onions, mustards and a specialty item, Sweet Thai Chili Paste along with a few baked goods; mainly brownies, whoopie pies and mini cake loaves.

I normally recycle jars as much as possible, but as my husband says, I'm a victim of my own success, so have had to resort to buying jars!eeek

I met my British hubby, Peter in the US.  He wanted to come back here and I didn't want to be without him, so moved over here with him.  I've been here now over 9 years and in October, we'll be married for 9 years.  He has a son from his first marriage and we have 4 cats: Alfie, Buddy, Crystal and Noddy.

A very warm welcome Terri, I hope that you will become a frequent contributor to the madness and otherwise that goes on here.  We like to have the viewpoint of different nationalities.

Is there any chance that you would share a recipe for Brownies, please?  I lost the recipe that I used to use, which was baked in a 13 x 9 cake pan and would like to make them again.

I'll try that again!

Welcome, Terri, you will find that we are all enthusiastic, Preserve Makers, and most of us sell what we make, some for Charity. All of us are into growing, and making things, so you have come to the right place. I make Cards, Soap, and Ointment, the latter on a small scale, from my own Calendulas. I have no problem sharing recipes!  This is the brownie recipe I use all the time and everyone seems to enjoy them. (even me!)

  • 1 2/3 C sugar
  • 3/4 C butter, melted (170g)
  • 2 Tbsp water
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 1/3 C flour (160g)
  • 3/4 C cocoa powder (60g)
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup plus 1/4 cup chopped nuts (optional) (I use walnuts)

Preheat oven to 350°F / 180°C.

Grease a 9" X 13" baking dish or line with baking paper.

Combine sugar, butter and water in large bowl.  Stir in eggs and vanilla.

Combine flour, cocoa powder, baking powder and salt in another bowl and then stir into the sugar mixture.  Stir in the 1/2 cup of nuts.

Spread evenly into baking dish and sprinkle with remaining 1/4 cup of nuts.

Bake 25 minutes or until pick inserted in center comes out slighty sticky. 

Cool completely before cutting into squares.

When I make these to sell, I usually make two batches; one with nuts, one without.  I also cut off the edges so they're more even and then cut into 12 squares and wrap up in plastic film.

Amber, I do have a couple of fruit trees.  We have about 5 elderberry trees which I use both the flowers and the berries.  We also have a couple of opal plum trees.  They are just ripening now so will be doing something with those soon.

I also have a HUGE sage bush which I use to make apple sage jelly.
