Although I can't quite imagine what 6lbs of smoked garlic would look like and cost to post, let alone how I would go about smoking it. wink

 

I now have 15 heads of garlic cooling and 'drying off' ready to vacuum pack in to 5 packs of 3.   

 

I have 3 customers so far, anyone else what a pack of 3?

whilst queueing at the post office to post them I got talking to a couple of ladies also queueing...

A quick question.....does the smoking process prolong the lifespan of the garlic?  How long will it last?  (yes, I know, just until I use it!  But you know what I mean)

wave Hi Sue,

I popped a few cloves in some very good olive oil to keep them fresh so I have been using those cloves in various meat dishes as well as getting delicious olive oil to dribble over pasta or to dip crusty bread into. I wouldn't risk keeping it in the oil for a very long time but a few weeks is obviously fine as I am still alive.......big_laugh. My kitchen is pretty cool otherwise I would keep the jar in the salad drawer of the fridge.

Yay, my postman has just delivered the garlic!  Thank you Simon, Paypal transaction completed too.  I think I might make garlic soup for my lone dinner tomorrow.i_am_hungry

Thanks Nadine, that's what I'll do then....or do you reckon it could be frozen? 

 

(as you know, garlic is off the menu for me for the time being, whilst on the FODMAP diet.....didn't think of that when I ordered it! doh.  Husband can still have it, but he's not going to eat all of it in a short space of time!)

Sue, please be very careful about how long you keep garlic in oil, botulism can occur using that method.  I can't give any opinion on freezing since I don't have a freezer.

wave I use it up long before that happens TA. 

 

Sue, I would freeze it in the olive oil, using ice-cube trays I poke plastic food wrap down into the trays & freeze herbs in olive oil or stock.....much easier to get out & the rubber ice tray doesn't retain the smell etc.  smile

The vacuum packing should reduce the oxygen content to about 5%. This alone will stifle the little buggers from multipling.

 

The garlic has also been roasted which will kill off any bugs and the smoke should act as a sort of antibacterial . They were in the open air for only about an hour to cool before I packed them. I am going to investigate using oxygen absorbing packs to further reduce the oxygen content. See below.

I have used garlic a couple of months after smoking without any ill effects. Keep it vacuum packed and I guess you could extend that to maybe 3 months.

 

Nice idea about keeping in oil. I did that once and kept it for about 6 months without any problems.
