I love olives. I put black olives and garlic into olive oil. It makes both the olives and the oil taste wonderful. Even better is orange peel and garlic and black olives. You can't leave them too long, since there is a risk of botulism from the garlic kept in oil, but I haven't had a problem with it--clearly, I am still here. big_laugh

I think that if you are able to dry the garlic that the botulism doesn't occur.

Or if it is scrupulously clean-is that how it is spelled, it looks wrong! But it is good, and the oil and garlic and olives last a few weeks, anyway. I am not sure about drying garlic, I like the smell but not to live in all day or for however long it takes to disperse.

The spelling is correct Barbara, funny how we sometimes doubt our selves.   I think I wouldn't mind smelling garlic all day.  In fact I thought it was the reaction of the garlic's natural oil with the olive oil, then again, I have read so many conflicting 'facts' about it that I have decided never to make it again!

I'll try that again!

I think it is the growth of some bacteria found on the garlic or contamination from the soil it grew in, when in anerobic conditions in the oil.
