That's interesting, Danny, and you're right because each time I have clicked on that site, it is a different one that appears. Curious.

Anyway, it was a recipe for an amazing brie 'sandwich', using a whole brie, sliced in half and stuffed with apricots and apples (pre-roasted to caramelise), then added to pecans and raspberry jam, well-mixed, then the sandwich is wrapped up in puff pastry. Cook.

Then, using raspberry brandy and cider put into a pan and reduced till it coats the back of a spoon. Cool slightly.

When the brie sandwich is cooked, and slightly cooled, drizzle the glaze over the puff pastry.

Serves 8-10.

Mouthwatering photo, BS - you terrible tease!

Veronica and S.O.L both - we know that people wax and wane on all their own favorite sites but it has been quite a while now since we have seen them both visit here. I know that S.O.L warned that she would be offline fora while. But . . what was her site again? I wonder if she is maintaining a record of her life at present. She was a stalwart of frugal living and cost cutting. We miss her enormously.

I checked, and S.O.L. didn't appear to have a website displayed - and her last post on the forum was in February.

Looking at Veronica's blog, the last entry was talking about Spanish markets, and Veronica said that they had 'been there three months', so I wondered if she has moved from France to Spain.

Resurrecting the canapes:

Attended an 'apero' at the neighbour's house, and they served some beautiful little square-y dishes with layers of, firstly chopped crab meat, then guacamole, then creme fraiche, then a small piece of smoked salmon, and a tiny branch of dill. They were all lined-up on the platter and looked wonderful. Last week, we went back again, and I (cheekily) asked for them again!! big_laugh

I have found a similar recipe, see here, using shot glasses which work really well.

Interestingly, they were served in little square-y plastic containers - looked like square glasses - probably about 2 inch square at the top - and we were given a little plastic spoon that seemed to 'match' the size, if you know what I mean.

I went into the local cheapy shop, and I have bought 2 trays of 6 little glasses, similar size, for Euro1.50 each tray.

Today, same neighbours are coming back to us.

I am making garlic and herb dip - with grissini to serve, and hubby has suggested I cook a batch of mini-sausage rolls, also to go with the dip.

Followed by potted shrimps - I have managed to buy the little grey shrimps, like in Lancashire(?) where they're sold nowadays. Served with a baby spinach leaf salad & vinaigrette.

Hubby will be smoking some fresh mackerel in our fishing-box-smoker, and served with horseradish.

It isn't meant to be a dinner, more a sumptuous apero!

However - the good bits:

My garlic and herb dip was lovely - we had cucumber & carrot sticks, and rosemary grissini with it.

They loved the potted shrimps.

The smoked mackerel - well, he wants to buy a smoker now. It was excellent.

I also oven-baked an Epoisse cheese - like a fondue - and had new potatoes and cornichons with it.

Their 10-year-old son munched his way through two boxes of baby tomatoes, too.

Friendly and fun evening. Great.
