Ruth, this is a really pretty one,

This recipe was given to me by my next-door-neighbour in France, Cecile, and it was taken from an in-magazine recipe from Intermarche. This is my translation - wink :

Recipe for verrines fraicheur - Serves 4

4 mini glasses.

1 avocado.

3 soup-spoons of grated crab (in the recipe, it is called 'surimi', which I think is a processed crab, just like the 'crab' sticks you can buy, but dressed crabmeat may be better - your choice).

1 lime, (juice).

Fromage frais " it says 2 squares (??) - perhaps it is possible to buy them in squares here!

2 soup-spoons of crème Fleurette " I think this is cream " Fleurette is a make of cream.

Fresh dill.

2 slices of smoked salmon.

 

Place portions of crab equally in the bottom of the 4 glasses.

Using half of the lime juice, mash with the avocado until a purée is formed.

Share between the 4 glasses.

Next layer, mix the fromage frais with dill (saving some for decoration) and the crème Fleurette, and some freshly grated pepper.

Cut some strips of the smoked salmon very finely, and place in a spiral form on top of the fromage frais mixture.

Sprinkle with the remaining lime juice, with a little more pepper if required..

Finally, place some salmon eggs on top for decoration, with the tiny branches of dill.

Place in fridge till needed.

Brightspark - re the recipe I assume where you said put salmon eggs on top you mean the smoked salmon or is there another ingredient?

TA, you're right - that is exactly what they are - see a pic here, and I hope you can just about make out the little salmon eggs.

Ruthdigs, that reminds me SO much of one of my gorgeous cats - despite living to 18 and 20 years, they (sisters) remained kittenlike throughout their lives. Miss them terribly. cry

You're right - they weren't on the original list either - so I was a tad confused at the time, but I could see the picture more clearly. I'm not sure they would add much - depends on how much you like them, I suppose!

My neighbour didn't include them!
