At the risk of upsetting you all, I'm having problems cooking meals in 40+ degree heat, however OH has this annoying habit of wanting food and NOT salads (bloody men).

 

As I luvs the man, thought about making some batches of stuff (early morning) that could be stored in fridge and/or freezer so he can just get something out and eat cold or reheat when he gets hungry.

 

Unfortunately my ideas ran out at frittata for the fridge ................ HELP  please otherwise he'll fade away.

I often make up batches of risotto, chilli rice mix, also various stews (beef, chicken, sausage, pork etc)that can be microwaved. Shepherds pie, fish pie that can be re heated. I am sure others will add to this list. Hope this helps.

Chilli Rice mix?  Is that chilli and rice or something else?  If something else more details please.

It is like a risotto but I add a tin of kidney beans in chilli sauce. This is usually veggie, onions, mushrooms, peppers, aubergines, courgettes, squash or any other veg you like. I freeze it in zip lock bags in single portions and reheat in microwave or stove top. Sometimes I add lardons for OH. This is good for when we have long days renovating and I don't have time to cook from scratch.

Sounds good Aly,

 

renovating = aaarrrghhhh, hoping to get a bathroom in before the bad weather arrives but having to learn about mud brick/plaster construction as we go along.  Animals, Fields and Garden a doodle compared to renovating.

 

Made a veg loaf thingy this morning, in oven as we speak, - as all veg grated he might not notice the lack of meat.   lol
