Has anyone ever made jam from desiccated coconut?
A friend bought me back from Thailand a large jar of coconut jam packed full of coconut bits (like desiccated coconut) or grated coconut. It was absolutely fabulous. 
I&#039;ve searched the Internet for a recipe but as of yet haven&#039;t found one. Does anyone have ideas on how to make it.
I make loads of fruit jams but coconut is a bit different ...?</description>
