Best vegetarian recipes: Anne Mary’s polenta sweetcorn bake

Before we go anywhere, this is not a portrait of Anne Mary. She has served this dish at every summer party that I can remember. I am not a big eater but having tasted this once I always make a beeline for it. And often return from the sunny garden for more. Under cover of going to fetch a pud, I creep back again for yet another surreptitious taste. This is a perfect veggie recipe, quick and easy to make and very moreish. AM gave me the recipe years ago but I made it for the first time only last week. No wonder it tastes so good. All that cream...

Best vegetarian recipes: Delia’s Vegetarian Shepherd’s pie with a tweak

We are chomping our way through veggie dishes on alternate nights. Actually, it’s been a joy so far. Great flavours and combinations. A revelation. Danny wakes me in the mornings. As he’s putting down my large mug of sweetened tea, he gently enquires who is cooking tonight. “It’s me and it’s vegetarian tonight.” “Great!” This response has as much to do with not having to cook as relishing the dishes that appear on the table. Delia’s vegetarian shepherd’s pie is truly wonderful. So...

Our recipe for thick bechamel is contained in our cauliflower cheese...

Quick Steak and Kidney Pie Recipe

This was the pie that I used to make before I discovered the merits of slow cooking. It does not quite have the soul of our Slow Cooked Steak and Kidney Pie Recipe but it is delicious. It’s well worth making if you are pressed for time and are willing to splash out a bit more on the meat than for the slow version. I always cruise past the cut price food section at Tesco and snap up any reduced priced packs of steak to freeze for this pie. Sometimes I run this up for Danny as a treat if he has had a bad day. This pie also magically...

Slow cooked Steak and Kidney Pie Recipe

One great thing about autumn and winter is savouring a really good steak and kidney pie. Another is that we have streamlined our weekday cooking but still eat well. We both love good food; even our mid-week meals of sausage and mash consist of Newmarket sausages (superb!) with creamy mashed potato and heaps of vegetables fresh from the garden. Neither of us wants to spent hours making supper during the working week. Even those ’30 minute meals’ seem to take us at least an hour. Eventually we twigged that we could avoid kitchen...
