Hi all,
Been out after my Swedish Summer Buck last weekend and this.
It has been a run of frustrating experiances, I have seen many but to far away or moving too fast.
Finally he came out just after sunset last night.
An old guy, the locals like it when you take the older ones out, it makes room for the younger Bucks, (thank god the Human race doesn't run on the same principles!)
As usual I am fishing for recipes, especially a marinade for the cuts that are a little more on the tough side.

I can make one recommendation for tough cuts, and that is to add a kiwi fruit to whatever else you are whipping up for a marinade.
Just smash up the fruit and mix it in.
The enzymes in the fruit will help break the tough fibers down.
But don't leave it in too long, lets just say it can work too good.....
If you can't be a shining example, be a terrible warning!
