Managed to cover my little Christmas cakes with marzipan last night, very time-consuming, but hopefully worth it in the end!  ok

Jan, I did the whole cakes, although I rolled the marzipan quite thin-ish. The cakes are small so I don't want the cakes just to taste of marzipan!!

I'll leave them for a few days to really dry out before I ice them.

not yet val, big_hug although thinking about it as I type this...in fact sod it, I'm going to get off my backside and do them now, provided they are in the oven for 9pm, then I can sit and watch Grimm while they are cooking.smile...back shortlywave ( Can you tell I miss the smileys when I'm on the ipad?)

What happened, Jan? Perhaps the oven is a bit cooler than theirs, or summat!

In the end I had them in for about 45 mins, Mike has tried 2 and said they were lovely but not like Christmas cake...too 'spongy'. I have to admit to a slight alteration to the recipe...I didn't have any treacle, so I put in 2 tbsp of golden syrup and a tbsp of dark cocoa...shouldn't have made that much difference to the texture. I might try one tomorrow but can't really taste anything at the mo, so not worth wasting one.

Just had a cake before I shoot off to a fair this afternoon, I think they have a rather nice texture, and I think would make a nice big Christmas cake.

Yes, I agree - they are not as 'solid' as a true heavy Christmas cake, but some people prefer the lighter type of cake.

Oh, and I have found the Fiona Cairns recipe that I mentioned earlier - it was 2 years ago, and in The Big Issue - she suggests baking them in small baked beans tins! Her recipe makes 22. She decorated them with a simple ribbon around the bottom, with different trimmings on top.

I will definitely make them again. smile   ok
