I like the idea of the orange and polenta cake, I seem to have masses of polenta here.

Yes, that does sound nice - I have just bought 4 of Lakeland's cookery books - all reduced to £2.50 each - fab recipes that I know I will have to make!

One of them is "citrus polenta cake". It is fine slices of orange and lemon poached in a sugar syrup and then the cake tin is lined with these slices, then the cake mix poured on top. When it is baked and turned out, the slices are very prettily arranged all over the cake. Very attractive. Then it is served with lemon flavoured mascarpone ...... mmmm .... "don't mind if I do" !! laugh

I was attracted to the orange and polenta cake because we have lots of yellow cornmeal which I'm sure is pretty much the same thing.

So... I finally got around to making the drizzle cake. We have a monthly cake day in work where people are encouraged to bring cakes in to share. This month it's to raise money for comic relief. I made one 'full sized' cake to take to work tomorrow and two 'cupcake' sized samplers for us to try tonight. I'd recommend the recipe but wouldn't bother using caster or icing sugar - I cheated and used granulated and it seemed to come out ok. I also used less sugar in the syrup and that turned out ok too. When the syrup had cooled it had almost turned into a marmalade.

The 7 or so weeks between me wanting to make it and me finally getting around to making it is quite quick for me. It took me about 7 years to get around to making pfeffernusse.

I think they might be similar. I have no idea how similar my pfeffernusse were to authentic ones - the mix spread out and they ended up like soft spicy cookies.
