Just thought someone maybe interested in my recipe for banana wine?
It is so old forget where it came from Originally. Started another batch today.
This is a cross between a white wine and liqueur. Quite potent !!!!!!!!
4lb bananas ( very ripe) I buy them in reduced box at local veg shop for 86p
2 banana skins,
8oz raisins chopped
3lb sugar
1 orange
1 lemon
1 gallon water
Tannin ( use teabags steeped in little boiling water for a while till cold)
Yeast: ''Tokay'' style or ''cereal'' yeast at a push ''white wine'' yeast.
METHOD
peel bananas and slice into 1 gallon of water in a large pan along with orange/lemon peel,banana skins ( save juice for later)
bring to boil then Simmer for 1/2 HOUR
Then strain liquid onto the sugar in a bucket, pressing as much liquid out as possible.
stir well to dissolve sugar.
Leave till just warm then add tannin (or tea) juices of lemon/orange also the raisins also the yeast.
Cover the brewing bucket and leave for 5 days stirring twice a day.
then strain into a demi john, leave to ferment onracking as and when the sediment builds up.
When ferment ended and wine clear bottle and store in a cool/dark place to mature.
maybe drunk after 6 month's, left longer and it improves longer it is kept.
