There are some delicious meals in this list from the blog. Most are also fast and easy.
Never knowingly underfed
Talking of chicken thighs, I often buy thighs or even wings, but must have the bone in! The wings are a 'hands-on' type of meal, just chewing off the meat, and saving the bones. The thighs are more suited to a roast meal, but the same applies - save the bones. After roasting, and cooking-up the bones, the resultant stock is delicious when made into soups and is the best thing ever. I like to make either onion soup or leek&potato soups, both very good nutritionally, too. Carrot and tomato is another variety which is great tasting.
Some budget meals may sound frugal, but, in all honesty, sometimes make much better healthy meals. Sometimes old-fashioned cooking hits the spot for taste, too !
