As I cook from scratch and try to make everything STRETCH. Let me say one word to you.
CARROTS.
I have one of these lovelies at home

that is excellent. roughly cut carrots, throw them into the cutting bowl with blade attachment. Whizz them up to a fine mince crumb. When this is added to a beef mince, for spag bol, chilli or cottage pie etc This when cooked, (i fry it in with the onions), looks and tastes like mince. it really makes food stretch and is good for you, as a diet too rich in protein is v bad. So say 500g mince and 500g carrots. Carrots are great in stock and stews so think how they enrich a spag bol. hmmm yummy just thinking about it.
and one thing my elderly Italian neighbours say, Brits eat their spag bol really thick and heavy on the meat. It should coat the pasta and be runnier as it is really based on a peasant dish. soffrito or mire poix is the base to so many things... my mouth is watering now.

Thank you so much for posting this. I have always added grated carrot to mince dishes but this time bought a kilo of mince and added about 700g finely chopped carrot plus lots of onions. Result: 2 cottage pies, 3 x spag bol, 1 lasagne, 1 cannelloni, all for 3 plus 2 little cottage pies for my Mum. Not a bad result from a £4 pack of mince!
The best bit? No one realised it was there
Morrisons are selling 1.5kg of carrots for 40p at the mo! Shame they are not organic though. Anyhow, I made some delicious soup at the weekend which was a fantastic colour.
fry off a small finely chopped onion with a stick of finely chopped celery.
add all the peeled and chopped carrots with a diced medium potato
add two tsp of fresh grated ginger.
Stir round for a bit and add chicken stock until completely covered.
Cook til tender and blitz in liquidizer.
It will need quite a bit of salt and pepper and I thinned mine down with a splash of milk.
Served with a cheeky swirl of cream everyone loved it. I have loads left over, even after lunch today. It would be great for hallowe'en!
