I have been doing a lot of research on wartime recipes, and came across this one from someone who was growing up in post war Berlin, They had barely any food and made Britains rations seem huge. This uses potatoe peelings and I think it must be like a rosti.
Kartoffell puffer - potatoe pancakes
potatoe peelings and small pieces of potatoe
a handful of flour
salt and pepper
cut the potatoe peelings into very small pieces, mix with the flour, season. Then fry them in a small amount of fat

Sounds a nice snack for just pennies, Eileen....I guess you could flavour them with herbs or spices too, or add a bit of cheese.
I read somewhere ages ago about making sort of crisps from scrubbed potato peelings - similar thing, just fry them then season whilst still warm. Not tried it though, mainly because I forget!!

I always cook my potatoes in their skins, to get the maximum vitamins etc (they also taste better to me). If I don't want the skins (as in mashed potatoes) I peel then while hot & save them to mix in with the chicken's food, otherwise I eat them.....good roughage. I haven't peeled a raw potato in tens of years.
