1 1/2 cups melted coconut oil
1/2 cup non dairy milk, I have been using soy.
1/4 cup olive oil
1/2 tsp salt
2 tsps liquid lecithin ( this comes from sunflowers and stops the mix separating) I bought this online.
Put all in blender and mix together. I have small Kilmer jars I keep it in but will change to something with a wider mouth when I can find it! Store in fridge. I get it out about 1/2 hour before needing as it is quite hard. I am using it in baking and spread on toast.
A good week but as I use it for baking I tend to make it twice a week! Keep in the fridge.
