Has anyone tried banana jam - it has never crossed my mind, as usually ripe bananas become cake in this house!
Saw this recipe, and Tisa seems to think it's something we should make!
Oddly enough I had someone ask me a few weeks ago if I had any banana jam, I had just sold my last banana chutney, which I won't be making again (not a big seller) and we had a long chat, it was something she had experienced while in the caribbean on holiday, so this sounds about right.
Might be worth a go some time, but worried about the 'brittle thread' bit, I'd say at that stage it's nearly toffee?
I made some banana jam but to a different recipe: to a kilo of peeled, mashed bananas I added 500g apple pulp ( leftover from jelly-making), 1.2kg sugar, bag of pectin powder, tsp vanilla and 1/2tsp cinnamon. Cooked as any other jam, it had set quite softly and tasted delicious! Ooh I had added juice of a lemon, too, and was considering lime juice for the next batch!
