I made this today, it was quite nice and very easy to make. It is not a long keeping chutney as it has very little vinegar so will have to be kept in the fridge and eaten quickly.
2cups of blueberries
1/2 cup of red onion finely chopped
2 tablespoons of cider vinegar
pinch of cinnamon
pinch of salt
combine everything in a pan over medium heat. Bring to the boil and boil for 3 to 5 minutes.
I thought it would stick to the pan as there was no extra liquid apart from the 2 spoons of vinegar, but the juice came out of the berries very quickly
Never give up Tomorrow is another day.
