I bottled some plums in brandy and sugar syrup today, but although I thought I had all of the air bubbles out, I hadn't. So now have some air bubbles in the jars. Does anyone know if this will affect the keeping quality of the fruit, or is it just an appearance sort of thing? The jars are sealing as I have heard the lids popping down.

Yes Chris I put it on there with photos this afternoon. I haven't put quantities apart from the sugar syrup, but I used 1kg plums , which made just over 2 1 pint kilner jars, and I think I used about 1/4 bottle of brandy. Have no idea what they will taste like, never done them before and sort of made it up as I went along, will probably use the half jar at the weekend.

I came across a recipe over Christmas that I want to try, Candied Clementines, we have a handful,left in the fruit bowl and I thought I might give it a try...it does involve water bath processing at the end, but hey ho, it's a blowy day outside, rain is forecast, so I'm staying in all day anyway! Seems simple enough....famous last words!
