Bottling vegetables using water bath method

Has anyone ever bottled vegetables using the hot water bath method?. I have been reading an old book that uses this method and also an intimitent method where the jars are boiled for an hour for each of 3 days. It says in the text  the first boiling destroys the bacteria but not the spores which grow when the jar cools, the second boiling destroys the new bacteria and the 3rd boiling completes the sterilisation. Has anyone heard of this or used any of these methods? or knows if they are safe?. Probably one for you Martin.

I have never tried a three times cook with vegetables- that is a new one to me.  I would think after three processes that the veg would be well overcooked.


There is sense in what they are saying- spores can be activated in to forming bacteria, and can be killed off once they have grown.


I would stick with a modern book and take the most up to date method of doing things.
